Eau de Villée is an exceptional lemon liqueur like no other. The result of a subtle blend of our finest yellow lemon distillates and four other fruit brandies, also distilled in our stills, it owes its name to the small stream that once flowed behind the Distillery.
This emblematic Biercée liqueur, born in 1981, is only made by our Master Distiller in March, at the height of the lemon season. Picked from the best untreated lemon trees in Murcia, the fresh Primofiori lemons are immediately and meticulously sorted and chopped before being left to macerate in temperature-controlled vats for several weeks.
Once the lemon aromas are sufficiently fixed in the macerate, it is distilled in our four Holstein copper stills, the Rolls Royce of stills. This distillation is carried out with the utmost precision and according to the rules of the art by our Master Distiller. After slow, gradual heating, he extracts the quintessence of the lemons. It is the clearest, purest distillate from the heart of the toasting process that is then stored for several months.
