September is pear month!

In September, we brought in 41 tons of fresh, untreated "Williams Bon Chrétien" pears from Trentino-Alto Adige in Italy. They are picked at full ripeness for maximum flavor and aroma. Here, nature guides our distillation schedule.

And why not Belgian pears?...
As far as possible, all our fruit comes from Belgium. The same is true for certain pear varieties, notably Conference, Doyenné and Beurré Durondeau. But the Williams Bon-Chrétien pear, whose elegant aroma gives our products an unmistakable flavor, is not grown in Belgium. It's a pear that needs a lot of sun and altitude. Rest assured that if it were grown here, we wouldn't go looking for it elsewhere...

As soon as they arrive, fresh, untreated pears are sorted, chopped and fermented in temperature-controlled stainless steel tanks.

No maceration here, but fermentation from fresh fruit, a unique process that the Distillerie de Biercée is one of the few to preserve.

Once the pears have fermented naturally, they are distilled in our four Holstein copper stills, and the resulting distillate is aged in stainless steel tanks for at least two years.

Copper is an excellent heat conductor and a material that does not allow itself to be degraded by fruit acids. They are ideal for refining eaux-de-vie by concentrating the aromatic components of fruit musts.
