This Poire Williams eau-de-vie is obtained by natural fermentation of fresh Williams Bon Chrétien pears from the Swiss Valais and Italy. They are then distilled in our copper stills. The resulting distillate is aged in stainless steel tanks for at least two years.
Created in 1997, Poire Williams de Biercée eau-de-vie quickly won acclaim from experts and connoisseurs alike. They appreciated its strength and full-bodied character. At the time, it did not yet bear its "N°1". It was in 1998, on the occasion of its first award, that our Master Distillers, proud of their first trophy, renamed it.
Indeed, in May 1998, Biercée's Poire Williams eau-de-vie won its first accolade in a blind comparative tasting organized by the Brussels-based Institut Meurisse. Eight wine and spirits industry professionals named it "best Poire Williams eau-de-vie among 16 European Poire Williams eaux-de-vie". Since then, proud of this recognition from their peers, our Master Distillers have christened it "Poire Williams N°1".
The recipe for our Biercée Poire Williams N°1 eau-de-vie has remained unchanged since its creation.
Crowned in 2003 with a Gold Medal at the Monde Sélection competition, and again recently with a two-star Gold Medal in the "Superior Taste Award 2018" blind tasting, this great eau-de-vie has its place in the best bars.
