Ingredients
5 cl Eau de Villée
2cl lime juice (1/2 lemon)
2cl cane sugar syrup
1 egg white
Accessories
Shaker, strainer
Champagne cup
Trim
4 drops Angostura
Preparation
1.
Fill your glass with ice cubes to cool it.
2.
Pour the ingredients into your shaker without ice cubes. Shake vigorously for 15 seconds to obtain a creamy mousse.
3.
Then add ice cubes to your shaker.
4.
Shake again for 15 seconds.
5.
Empty your glass of ice cubes and pour in the contents of your shaker using a strainer.
6.
A fine foam settles on the surface.
Tip from the pro
Sour is a mixture of sugar and yellow or lime lemons that can be mixed with most spirits. Egg whites add texture to the cocktail.
